The Yolanda's Tacos Story

Founder Bob Walker met Yolanda Lopez of Jalisco, Mexico in Chula Vista, California during the summer of 1971. As they became friends, this retired lady took him, her "gringo" son, aside and showed him how to prepare the traditional food and salsas of Mexico. In keeping with this tradition, Yolanda's Tacos serves the fresh traditional food of Mexico daily.

Matt Schroepfer

CEO of Yolanda's Franchise Corp.
Secretary/Treasurer of Yolanda's Unlimited Corporation

Matt joined Yolanda's Tacos as an owner in 2006. Prior to joining Yolanda's Tacos Matt served as a Telecom Consultant for KPMG Consulting, LLP in its Communication Content Division. Matt holds a BS in Marketing from Christian Brothers University and Masters of Science in Telecommunications from the University of Colorado, Boulder.

Jean Walker

President of Yolanda's Unlimited Corporation

Jean is the co-founder of Yolanda's Tacos, and since its inception has assisted in managing the Castle Rock location. Jean has over 20 years of food operations experience, including restaurant management and recipe development. Jean is also a trained pastry chef and has extensive experience in developing training policies and procedures for restaurant employees.

Brad Goodyear

Vice President of Yolanda's Unlimited Corporation

Brad joined Yolanda's Tacos as an owner in 2004. He began managing the Greenwood Village location in September 2006. Previously, Brad spent 15 years with Aramark Worldwide Services. For 12 years Brad was Vending Operations Manager at the John Deere facility in Waterloo, Iowa.
